Country Bread

Okay, this one I got from allrecipies.com and it is awesome!  A hearty white bread that is chewy with a touch of sweetness!  It also has a bit of ground ginger to add a little bit more flavor. 
 I also love that it is braided, has an egg wash and then sprinkled with seeds.  Definately making this one often!

Starters, Soakers, and Bigas! Oh MY!

I actually did these a couple of weeks ago.  Kaiser Rolls and a Whole Wheat Bread.  Both started with time spent in the kitchen Saturday night making "fermente's".  They give the bread an added flavor element.


Everything mixed up and rolled out just fine....sadly the kaiser rolls looked nothing like the pictures!  I have a suspicion that the author used an egg was and neglected to share that info! 

On the up side the wheat bread  is about the best I have ever made!       Really worth the effort.  I should mention that the Wheat bread recipe is from "America's Test Kitchen".

Back at it!

Okay, after a break for the fair....I had to crack open the book and do some new recipes!  Woot Woot!  The first one came from the The Bread Baker's Apprentice, Italian Bread.  Yummy, chewy, crusty goodness! 



The next one is from the Baking Sheet:  Rustic Cheese and Rosemary bread.  Total heaven.  This one has a artisan crust and a soft, squishy inside filled with cheesy, rosemary laced yumminess!  Top that with more cheese when baked and I am sold!
Can hardly wait to try a few new recipes and start picking some for the 2012 fairs!

Focaccia March 13, 2011


Nothing like making a mess on the counter to let this yummy bread
rise all afternoon! This was a sticky dough that I had to stretch and shape every half hour. Then rise one last time after dimpling with my fingers and pouring a fragrant herb oil over it. The house smelled like an Italian resteraunt! : ) Definately a make again recipe!

Cranberry Walnut Celebration Bread



Okay, in this week's trial I substituted pecans and dried currents for the craisins! So fire me from the project! : )

But, the recipe was easy to make, it rose beautifully, and tastes yummy! It was my first time making a double layered braid....I think this technique could use some practice.

Overall, I would rate this one a success.

Corn Bread


Ted informed me that I was falling behind in my challenge....so next up was cornbread! And anything with bacon in it wins a test run from me! After making the cornbread, I would have to admit that it is really yummy and worth making again! Did I mention that it has bacon in it?!

Week 5:Casatiello Bread


This bread went much better! It is an Italian brad with yummy Provalone Cheese and Dry Italian Sausage baked right in! This one is definately on my must make again list! I want to try it with different cheeses and meats. Cheddar and bacon seems to be calling my name!

Next in the book is Challah. Ted is allowing me to skip this lesson based on the fact I have a prize winning Challah recipe already! So stayed tuned for Ciabatta.....
